The art of preparing perfect risotto lies in cat- ching the precise moment when it is cooked: soft outside, a little resistance or bite (al dente) inside. But how do you do this? Urs Gschwend, our chef de cuisine, will show you how in his popular risotto course. Gschwend reveals some professional tricks and will give you plenty of tips to take home so that you too can prepare the perfect risotto in future – be it with mushrooms, seafood, tomatoes or simply saffron.
CHF 75 per person, including an aperitif in the kitchen followed by a risotto dish in our restaurant.
